I had some perfect home grown tomato’s and I’ve taken the hint from @frankie_u and peeled them so worth the effort (top tip!) , adding a generous helping of @belazu_co early season extra virgin olive oil, some capers I brought back from Croatia crisped in a little in olive oil and some toasted stale sourdough croutons and a crumbling of feta, super simple, super tasty!

Mangos were going cheap at my local shop 67p for 2 !! I couldn’t resist such a bargain and bought 15 puréed them and churned into ice cream
